A Family Favorite.

A delicious comfort food. I grew up often eating this at my parents house or at my Aunt Mary’s: sausage, peppers, onions, tomatoes, potatoes.

Into one roasting pan I added a can of diced tomatoes, one-half red onion thinly sliced, one orange pepper diced, two cups thinly sliced potatoes (I used potatoes from The Little Potato Company), one sweet Italian sausage thinly sliced (I used chicken sausage from Smart Chicken.) , two gloves garlic thinly sliced, one-half cup chicken broth (I used my homemade chicken stock.), one-half cup white wine, one-quarter cup olive oil, some red pepper flakes. Roast at 420 for 45 minutes.
