Mount Evans is the highest summit of the Chicago Peaks in the Front Range of the Rocky Mountains of North America. The prominent 14,271-foot (4350 m) fourteener is located in the Mount Evans Wilderness, 13.4 miles (21.6 km) southwest by south (bearing 214°) of the City of Idaho Springs in Clear Creek County, Colorado, United States, on the drainage divide between Arapaho National Forest and Pike National Forest.[1][2][3]

The peak is one of the characteristic Front Range peaks, dominating the western skyline of the Great Plains along with Pikes Peak, Longs Peak, and nearby Mount Bierstadt. Mount Evans can be seen from over 100 miles away to the east, and many miles in other directions. Mount Evans dominates the Denver Metropolitan Area skyline, rising over 9,000 feet (2,700 m) above the area. Mount Evans can be seen from points south of Castle Rock, up to (65 miles (105 km) south) and as far north as Fort Collins (95 miles (153 km) north), and from areas near Limon (105 miles (169 km) east). In the early days of Colorado tourism, Mount Evans and Denver were often in competition with Pikes Peak and Colorado Springs. (Continued here:)

Grilled Chicken with Strawberry, Pineapple, Jalapeno Salsa

Simple and delicious. Perfect summer dinner.

Grilled Chicken with Salsa

1 medium lime
2 tsp. minced garlic
2 tsp. olive oil, divided
1/2 tsp. salt
freshly ground pepper
4 (1/4 lb.) skinless boneless chicken breasts
2 cups 1/2-inch diced strawberries
1 cup 1/2-inch diced fresh pineapple (I used one small can diced, which I cut into smaller pieces.)
1/4 cup minced red onion
2 Tbsp. chopped cilantro or basil
2 tsp. minced jalapeño pepper
1 tsp. sugar

Preheat grill or grill pan. Zest lime; set aside. Juice lime; set aside.

In a medium bowl, combine 1 Tbsp. of the lime juice, garlic, 1/2 tsp. olive oil, salt and pepper. Add chicken, turn to coat both sides and set aside.

In another medium bowl, combine strawberries, pineapple, red onion, cilantro, jalapeño pepper, sugar, remaining lime juice, the lime zest and the remaining 1 1/2 tsp. olive oil. Taste for seasoning and add salt and/or extra minced jalapeño if you like it spicy.

Grill chicken breasts and serve with salsa spooned over top.

Roasted Beet, Pistachio and Pear Salad

Roasted Beet Salad

Ingredients

2 beets (about 3/4 pound)
1 cup diced Asian pear or ripe pear
1/4 cup diced celery
2 tablespoons chopped pistachios
3 tablespoons fresh lemon juice
1 tablespoon honey
1/2 teaspoon brown sugar
1/4 teaspoon black pepper
Dash of salt
Dash of ground red pepper
2 curly leaf lettuce leaves (optional)

Preparation

Preheat oven to 425°.

Leave root and 1 inch of stem on beets; scrub with a brush. Place beets in a small baking dish. Bake at 425° for 50 minutes or until tender. Cool. Trim off beet roots; rub off skins. Dice beets.

Combine beets, pear, celery, and pistachios in a medium bowl.

Combine juice and next 5 ingredients (juice through red pepper), stirring well with a whisk. Drizzle over beet mixture, tossing gently to coat.

Serve at room temperature or chilled on lettuce leaves, if desired.

P.S. I stood in the pouring rain with an umbrella in one hand and spatula in the other as I grilled the steak!
