Five-Spice Salmon

Ingredients
1. 3/4 lb Sockeye Salmon
2. 1 lemon
3. 20 Cardamom pods
4. 1/2+ teaspoon Five-Spice
5. Kosher Salt & Pepper
6. 1 tablespoon Olive Oil
Directions
1. Preheat oven to 400
2. Rinse Sockeye Salmon, pat dry, set aside
3. Thinly slice lemon, saving an end to squeeze 1 tablespoon on Salmon,
and place slices in swallow baking dish.
4. Crush Cardamom Pods and place on lemon slices
5. Place Sockeye Salmon on top of lemon slices & Cardamom
6. Squeeze lemon on Salmon, Oil, Salt & Pepper
7. Spread 1/2+ tsp of Five-Spice over Salmon
8. Bake for 15-20 minutes
